From Shell to Slice – ICM Brings Pizza Pilgrims to Life on Rose Street!

ICM began an exciting transformation on December 16th, 2024, taking on the challenge of converting an empty retail unit on Edinburgh’s vibrant Rose Street into a brand-new Pizza Pilgrims restaurant. With a 14-week programme in place, the team wasted no time stripping the site back to its bare shell, clearing out the existing layout and preparing the structure for a complete reimagining. The aim was to deliver a two-storey pizzeria bursting with character, functionality, and the unmistakable charm of the Pizza Pilgrims brand — and ICM delivered.

The ground floor was reconfigured to house a showstopping pizza oven, a front-facing bar, a spacious seating area, and a well-planned cellar room. Every feature was carefully considered to balance style and operational efficiency. Upstairs, the project continued with a dynamic layout that included accessible DDA toilets, male and female bathrooms, a prep kitchen, staff amenities, and a second impressive seating area. The standout feature on the first floor was a unique masterclass kitchen equipped with a second pizza oven, allowing the venue to host pizza-making events and interactive dining experiences.

ICM’s experienced site team demonstrated exceptional coordination and craftsmanship throughout, overseeing a broad scope of works from bespoke joinery and floor raising to partition building and shop front alterations. The creation of new fire exits, the integration of various flooring and wall finishes, and meticulous site safety protocols were managed in-house, ensuring seamless delivery. With so many trades involved, precise scheduling and effective communication were vital to maintaining progress and quality throughout the build.
Transforming Space, Elevating Taste – A Two-Storey Pizza Experience Delivered by ICM.
Working within the constraints of a partially pedestrianised high street in Edinburgh’s city centre posed its own logistical hurdles. Rose Street’s access restrictions meant all deliveries and collections had to be meticulously timed and executed. ICM’s purchasing team coordinated every delivery with suppliers and labour teams to avoid disruption and keep the site operating efficiently. Despite the complexity of the project and the busy city-centre location, ICM successfully handed over the finished Pizza Pilgrims restaurant on March 10th — on time, on brief, and ready to welcome its first slice-loving customers.
